我老公作为配偶在填表时，他的职位应该怎么填？是填还是不填？

如果我们如实填他在国内有工作和收入，可是税表中又没有体现出来，这不是自相矛盾吗？
税表is not required for 485 now.

如果不填，移民局会不会从签证记录中发现他在国内的工作信息？
移民局will do background check, so you should provide the correct information.
