You can stay in AOS, and you can use this offer to reply to the RFE. With the offer proving you are continue working in this NIW field, your I-485 won't be denied for this reason. If your I-485 gets denied for another reason that you didn't mention, you need to reenter with H1 or H4 stamping if the reason for the denial does not render you inadmissable (such as criminal history,3/10 years bar,... will get your H1 visa interview denied too).
