My parents applied visa themselves and they just left that box open in DS156 since they were already retired.
If 中信银行非让在现在的工作的单位里填上以前的工作单位， 不然就不收这个表, you probably have no choice unless your parents choose to apply visa themsevles.
However, I don't think it really matters if they put their previous employer information in the form.
