work experience for CA immigra

can anybody with canada immigration experience help me?
What do I need to prove me work experience?
Employment contract or a letter from employer, or both of them?
Do they all need to be notarized? if yes, how?
I am almost giving up the effort, too much crap needs to be prepared.
