Do you know if we can change our employer during OPT?
-Yes.

If so, what type of document is necessary?
-No document needed

Should we wait for approval from immigration office if we want to do that?
-Just resign from your current employer and work for the new employer. You just show your EAD (from OPT) to the new employer and that is all!
