Your I-140 will not be affected by the fact that you are not working for the employer which is listed, while will the I-485. You may change I-485 to CP, and come back to work for the original employer upon approval of GC.

When you still pursue adjustment, you may change employer with guidelines in mind, which an important one is "same/similar". Again, your I-140 is not affected but I-485.
