If your current status were H (H-1or H-4) or L status, you can go outside U.S. and get a H or L visa to enter U.S., and this will not affect your I-485. But your current status is AOS, not H/L, if you go outside U.S. and return to U.S. with an H-1 visa and of course you will get an H-1 status, but your I-485 will be invalid.
I suggest that if your I-140 or I-485 is denied, you can go outside U.S. to get H-1 visa back to U.S. to get H-1 status. If not this situation, just work by using EAD.
