I think you should also file Eb-1 right away

Since you filed NIW, I think you could try EB-1b or Eb-1a, too. I have a friend who first filed NIW in year 2004 but was rejected. Then he switched to EB-1b in 2005, got 140 approved in no time (He got his GC two months ago). I follwed his suggestion to file EB-1b and was approved (my GC last month). So I would suggest that while you are appealing, you could file another EB-1 immediately. The most important part of NIW or EB-1 is the cover letter, where you should demonstrate your qualifications one by one based on the requirements. 成绩不一定伟大，但可以 说的伟大。
I think you should file it right away. As long as you submit another 485, then you are in good shape (not sure if we can still file 140 and 485 at the same time, though). Good luck.
