help needed for job offer before I-140 approval

We just got a rfe request for the I-140 based on my wife's postdoc. Currently I have a job paid 30K+ in a university with nontransferable h1b. Now I got a job offer from a small company with salary 70k+. I have made up my mind to accept the offer. What can I do if the worst happens when our I-140 is rejected? What is the best way for me to keep legal status in US?
