the risk of using EAD is that once I485 is denied, you are out of status, with H1 you don't have that problem if i485 is denied.

However, if i140 is approved, i485 being turn down is very slim, all it takes is waiting.............. yes, long.

I'd say go ahead and do what makes you happy! Life is too short to waste in GC waiting line.
