In order to work in industry with H1b, you need to apply for a new caped-type H1b. But this statement "我看了有人说用了EAD再申请H1B会导致485被拒" is not true. A new h1b does not affect your 485 eligibility, on the other way, it's a safe backup.
What's your GC type? Eb1b? NIW? If NIW, you won't need to worry about 180 days issue. For Eb1b, you probably need to pay attention to the level of titles. Is it equivalent or higher than the previous one?

Title change is not the marker for field change. As long as in your new job, your job duty is similar to what you stated in 140. Should be safe. If you have the chance to draft the employment verification letter, write it closer to what you were--put those key terms from the descri-ption in your previous job duty.
