I had very similar situation as you have. My i-485 case was pending for more than 2.5 years and the NC was finalized on 04/2007. Recently (09/05/2007) my case was approved. Here was what I did. Not sure which one triggered the case approval.

I wrote a letter to NSC Director to complain the status (NC finalized but the case was still pending). And I wrote a letter to congressman of our district to complain the fact.
