Adjustment of permanent residence status is pretty fast if the beneficiary is a USC's parent. My friend petitioned for her Mom the second day after she became USC. Her mom received the green card within 3 months. She is in NYC. Yes, the beneficiary (parents) cannot leave the U.S. when their I-485 are pending.
