If you're not primary applicant, you just do whatever you wish.

If you're NIW, you may take either one as long as they're in similar fields.

If you go with PERM, stay still until 180 days has passed since you submitted I-485.

When you can accept either offer, I don't think your I-485 would be denied only because of the company being just started.
