1) No better than option 2. If you get greencard before he files 485, FOLLOW-TO-JOIN is out of the question. He has to wait until you gets citizenship.
2) is the best. He can come with multiple entry H-4, file 485/EAD (No need of AP for him) with you, go back to Canada and come to visit you often.
3) If he doesn't care about US green card, it's fine. But after filing 485 with you, he can get EAD to work in US without restriction.
