It should be OK for any date. My job letter for I-140 was one year earlier than I came to US. I knew the error but did not ask the boss to write another. Leave a window for the USCIS to talk to the boss and it may help you in process your case. I got my 140 proveled in three months. They might not care about the date because my boss never talked to me about any phone calls from USCIS.
