I have the same situation as you. The safest way is 1) you file your I-485 first (not including your son); 2) your son apply to change H4 to F1 status; 3) file I-485 for your son under your case after his F-1 status is approved. Thus even your I-485 is denied later for some reasons, your son can still finish his degree under F-1 status. Of cause, he needs to pay out-state tuition by this status change. But I think it is the most important for kids to be able to finish their study.
