Yes, you can

go to China with your Chinese passport. But you may have problem when you leave China. If you use the same Chinese passport to go back to Canada, you should have Canadian visa. If you use Canadian passport, Chinese officer in the airport will check your passport and record for entering China, and find that your Canadian passport has no Chinese visa and entering date. That might delay your boarding time, and you may miss your flight.
gestion: Use one passport for the round trip, either one works. Of course, you may need a visa.
