What is AC21 I have a 485 Interview in a week.

I changed job from a postdoctor in University to industry. The job is in the same field.

Question:

An employment letter describing what I've been doing (same research as when applied NIW) is enough ?. Or should I use AC21?
(What is it? ) Could you please provide more information?
