You don't need to worry about the supporting letter. After approval, it is highly impossible that whithdraw of your boss' supporting letter will invalidate your EB1 I140. I don't think your boss will do the withdrawing things. In doing that, your boss will also hurt himself.

You can transfer the I485 from EB1 to NIW.
