You should always have EAD on hand just in case you need it. I speak this from my personal experience.

You can try your OPT application, but there is a good chance it will be denied because you filed I485. If that happens, you will have to use H1B or EAD to work. If you I140 has been approved, it is usually safe to use EAD .
