Theoretically the immigration law allows you to change employer under certain condition. I know some people who changed jobs, and a few got I485 approved. Most of them have I485 pending still. Difficult to tell the impact. Anyway, it is your decision and you'd better talk with your lawyer before making decision. Good Luck!
