F1 using AP and EAD

XDJMs, My current status is F1, my spouse's I-140 got approved. We have pending I-485s. We plan to go back to China to celebrate Chinese New Year. I plan to use AP and EAD to enter USA, is there any risk of doing that? I am going to graduate this summer, can I change to H1B in USA after using AP and EAD? Many thanks and happy new year!
