Your wife is no longer F1 now

Since 485 has been filed for her, she is AOS, no longer F1 anymore. She is no longer valid for OPT, etc. The international students office might not notice it, or they might know the regulations well, but in law your wife is no longer eligible for any non-immigrant visa. She could use her EAD though to work.
