----If you don't use it, you are still in H1b status.

2)If I re-enter U.S. using AP, will it affect my H1b status?

-------No, you can still renew your H1b, still holding H1b status.

3)Do I need to renew the EAD and AP every year ? could I "renew" or re-apply them after the expiration date during the I-485 pending?

----If you don't need them, you don't have to apply for them. Whenever you need them, just send out the application.
