How long will you be back home? It is very unlikely that your 140 and 485 be denied during the period you are outside US. You can always try to apply your H-1. Even denied, you can come back with your AP.

AP has no impact on your I-140/485. The downside of using AP is you may have trouble to renew/transfering your H-1. I am currently transfering my H-1 to new employer under this situation. If you do not want to change job in a few years, why not using your AP?

Go back to see your mom. Chinese people are too conservative.
