1) Before your 485 is decided, your stay in US is legal no matter what.

2) In order for your 140/485 to be approved, you have to remain in the same/similar field of work.

So with a 485-based EAD, you can work for any employers you want, however, if you don't stay in the same/similar field of work as your original GC petition, you may not get your GC.
