After you use AP, your status is AOS, but you can continue to work for your employer without EAD. You also can reinstate your H-1 status anytime by doing H-1 extension, transfer or going outside U.S. to get a H-1 visa. Anyway, H-1 hoder use AP is very safe for your status and your I-485. The only inconvence is that if your spouse/kid wants to get an H-4 visa or H-4 status, that will be a problem.
