Choice 1:
Let your wife continue using TN until your PD is current. Then before submitting I485, renew her TN. That way, she could work on EAD onwards. Note before you submit I485, they don't know she is applying for GC and will continue to grant her TN.

Choice 2:
Get her a H1.
