After you file your I-140 before filing I-485, you are still H-1b, so you can go home and apply H-1b visa coming back.

After you file your I-485, you can 1) either file AP and use AP coming back without visa, or 2) still use your H-1b (apply your H-1 visa in China) coming if you work for the same company.

No matter what situation you have, you can go home and come back.
