Technically, the date of out of status is 停止工作当天, not 最后一张paycheck. But usually, the uscis officer is not so strictly to follow the rule if you are out of status for a short peroid of time (for example, within 30 days). One of my friend once was out of status (I-94 expired for the first three-year H-1B) for three weeks, but he still got his H-1B transfer fully approved. Please note that when you quit your job, you do not have the ten-day grace period for H-1B. Only when your H-1B status naturally expires, then you have ten days for preparing to leave USA.
