I think so. I hold Canadian passport as well and went to China and TW several without problems. The time you got your Canadian passport, you gave up your Chinese citizenship because neither China nor US accept dural citizenship, although Canada does. So from now on, you need to apply for the visa to China before you go back, and you need to take both passports and your original H-1 paper when you come back to US. You need to go through the counters for foreign visitors, not the one for US citizens because you hold H-1.
