You can provide these info, however, as to whether these can be used as evidence are not guaranteed, because for NIW, what you are doing in a national interest is the most important point that the immigration officer will be used to consider, not your chair or co-chair titles; for EB-1A, there are 10 criteria. If you meet 3 of them, you are in, but again, not your chair or co-chair titles.

Just like I said, it is no harm to provide these evidence, and immigration officer may interpret it as one of the evidence, who knows?
