What's the RD of your EAD renewal petition? If it has already passed three months, you can go to USCIS local office to get the interim EAD. I don't think you can work during the gap from a legal point of view. If you have some vaction day left, my suggestion would be to take off a few days until you get your new EAD or your interim EAD.
