Your opinion is absolutely wrong. When you change the employer, you only have the responsibilty to work for your current employer after you get your GC, not need to work for your old employer any more even if this employer sponsored your I-140. So, even if the old employer withdaws the approved I-140, it will not affect your I-485. This is the point of AC21 rule.
