XiaoBaiTo and other experts, please help EAD or H1B

I am in 7th year H1B holder. EB2 LC has been approved and employer can file concurrent I-140 and 485 in this month. My questions are:

1. Will I benefit from I-140 PP (paid by myself)? One benefit seems 3-year H1B extension.

2. If I use EAD to work for another company as part time, what are the risks after losing H1B (I already in 7th year and filing company seems not stable)?
