Which Software should be downloaded to write Chinese e-mail?

I have downloaded NJStar to type Chinese e-mail. However, the receivers of my e-mails could only receive a lot of mess codes.

I will appreciate it greatly if you could kindly tell me the web address and which software should be downloaded in order to have a correct Chinese transmission.
