咸蛋

6月20号又开始腌咸蛋,(鸡蛋)今次的鸡蛋好成功,咸淡式中,以前的鸡蛋白软绵绵的,這次比较硬,像咸鸭蛋白,可以說是腌"鸡"蛋中最成功的一次,以后都会用这个方子.

一杯鹽,三杯水.

把蛋洗干淨,抹干

煮滾攪勻待涼.還有鹽在底.

把蛋放在樽里,再把鹽水例到蛋里(和剩下的鹽一起),寫下日子,放在一旁.

大約20天就可以吃.還有些鹽在底.

不知為什么,一只出油,一只沒出.我是和米一起煮的,煮得太久,所以蛋黃有些變黑.
