I like Udon noodles better
It's more smooth, and very easy to make also. Just use bread machine to knead for 20 mins.
Hand rolled noodles dough need to rest for at least one hour, flour to water ratio 2 to 1.
Softer, loose dough is easier to process. It's still pretty chewy, with one or two eggs added.
I don't like its overall texture though, its edges are not very even after boiling.
Make Jiajiangmian is perfect. Korean style, very dark sauce.
