很久没写帖上菜了,今上传几个家吃小菜与众分享

薰鱼

上海所谓的熏鱼并非为烟薰之鱼,而采用油炸的方式,我用的是猫鱼切排,先入酱油腌制风干,再油炸入料汁浸泡即成,口感鲜甜。《猫鱼去腥法;整鱼洗净,入开水中烫几秒钟取出,用钢丝球抹去鱼体粘液至鱼表发白即可。》

薰鸡腿;

懒人山寨版,先将花椒盐腌制鸡腿,24小时后洗净,可蒸可煮,我是用煮的方式,煮泡30分种,取出吹干,蒸锅底加锡纸上放白糖、面粉、八角……上架鸡腿,盖盖,薰15分种即可

跳舞的四季豆:

此菜很简单,在做好的四季豆上撒上柴鱼干,即速上桌,由于柴鱼受热、潮会慢慢扭曲收缩,如同在四季豆上跳舞,很受欢迎
