《宝煲家常》向妈厨交作业,山寨“算你白揉”

上星期我们吃喝团聚会,其中有一道“蒜泥白肉”使我品尝到了一种久远的回味,成品通透油亮,质地细嫩滑爽,蒜味浓郁,味道鲜美,回味无穷……以前自己也做过,但肉质老木,酱汁清淡,杯具呀,这真是不怕不识货,就怕货比货,经我团妈厨的细心传教,终使我又学到了许多,今特山寨一个,一来向妈厨交作业,二则求各位吃川菜长大的高手指教,先谢啦!

学生我的作业,怎么感觉有点骨瘦如柴呀,呵呵,

五花肉一块,锅水中入姜块、葱段、八角几粒,入五花肉水开十分种关火{我信心不足,煮了15分钟}将肉焖在汤水中至凉改刀切片:

酱油一勺烧开加糖一勺,搅至酱汁浓稠至冷,加入花椒油、辣油,最后吃时再加蒜泥,否则蒜泥吸汁变黑,影响口感与色彩,

最后与黄瓜片摆盘即成,可惜,有点甜了_:'( _:'( _:'( _:'(

农家小炒肉;
