家乡小菜:糯米大肠

糯米泡水4-5小时,干贝泡泡水洗一洗然后弄碎,虾米切丁,眉豆泡水4小时再大火煮半小时,腊肠切粒,水发香菇切粒,先将葱蒜炒香+干贝 虾米 眉豆 腊肠 香菇 +糖 豉油 鸡精 香油 炒熟 待凉后与糯米混好.

大肠洗干净,用小绳绑好一边,然后将混好的糯米从另一端塞入,绑好,煮开一锅水+姜葱 酒 南乳 老抽 酱油 糖 鸡精,煮开后+大肠,中火2小时....完成!!!切片。。。。摆盘!!!

我不懂调较卤汁,买瓶卤汁回来加水冲淡+ 原晒鼓 柱侯酱 南乳 冰糖 八角 花辣 辣椒 姜 葱 老抽 (罗汉果 丁香 桂皮 就不用每次加入了 卤水每用4-5次后再加点就行,推荐用李绵记卤水 但要加多点糖和水,挺咸的,卤汁跟水的比例大约1:8或1:10 糖就按个人口味,最好用冰糖)煮开5分钟就可以用了,一只鸭子小火加盖45-50分钟就很入味了。
