DIMM and SoDIMM are "form factors" -- DIMM has 168 pins and SoDIMM has 200. Laptops usually use SoDIMM.

DDR is one type of SDRAM. PC2100 = 266MHZ, and PC2700 = 333MHZ, and they are the speed of DDR.
