Which software should be downloaded to write Chinese e-mail???

I downloaded NJ Star to write Chinese e-mail, but the receivers always received a mess codes.

Please tell me which software is the best to write Chinese articles to be sent via e-mail. I shall appreciate it greatly if you could kindly tell me the web address for such software.
