On tenderness ...

I find it quite effective to use half of a tea spoon of baking soda to marinate the meat overnight.  If I don't use the baking soda, the meat is not tender enough even if I marinate it overnight.

I only use half of a tea spoon though.  More than that, you will taste the baking soda.
