How to reject the project that I do not want to do, and get more

We usually have multiple projects in parallel, how to reject the projects or requirment that I do not want to work on it, and get more time on the interesting projects?

Project managers always say their issues are urgent and critical, I let them talk to my manager, but my manager do not want to reject, any good idea?
