question about an offer

I got an offer from a samll company.The company wants me to accept the offer in a week and start the job in two weeks.It is an ok offer,but I still have some intervews going on. Can I reject the offer or quit the job after I accept it if I get a better one? I just want to give me a littel more time to find a better job.
