First of all, you have to dress,talk,act,and negoniate like a senior guy. (Maybe in the bottom of your heart, you really consider yourself a "doesn't care too much" type of guy.) People do sterotype, especially HR folks. It could be a simple solution: Tell them something like "...after giving a lot of thoughts, I have only one concern. I am more interested in a senior position given my qualifications and experience. I apply for this position with a wish to add the value to the company and make a difference, and of course also becaue I love this business and what I do..." then explain why. You need to confortablely list your qualifications on the table (Remember the TOEFE English written test --- you throw an opinion on some topic, then support it with 1,2,3 reasoning in 5 minutes.) The same idea applies here. In doing so, you demostrate the fact that you take yourself seriously.(At least it seems to be.) Don't be shy. Be humble,sincere, and keep cool. If they are trully interested in you, and you are able to successfully convince them. They would make a compromise. But you should also have a bottom line. -- Would you walk if it doesn't work out? One should at least give a shot. It absoultely worth trying. I don't think you would loose anything. Good luck and keep us updated.
