what could happen when engine oil is overloaded?

I had the timing belt and water pump changed last week on my VW. Now I found (100% sure) that additional engine oil was added on my car, of which I am not informed. I am concerned about 1) wrong type of engine oil and too much is loaded. I don't know what could happen and what I should do now.
