Do this

1. From now on, don't say you didn't stop. Say anything else, like you did a full stop, or you couldn't remember.

2. You only need to prove that the cop , from his point of view, was UNABLE to see you if you stopped there.

By proving this:
1) Park your car at the stop sign and take a photo of it from the cop's position.
2) Draw a map of the intersection. You can print a map from google map satellete.
3) Write down what you prepare to say in the court and review it several times.
